Yes. Texts, images and whole pages you edit in the normal WordPress editor. What you cannot do is move the layout, and that is deliberate. In practice that is the difference between a site that still looks good after two years and one that does not.
Both work and both bring load time, because the whole toolbox is loaded on every page. If you already work with one we continue in it rather than pushing a migration on you. For a new site we advise against it and say why.
There is no fixed number, but from around twenty it gets hard to survey and from thirty hard to maintain. On most projects we manage with under twelve and justify each one. What counts is not the number but whether anyone knows what each is for.
